Color saturation could be set in camera before taking a shot. The original picture appears to be for most users desaturated and dull, so most of digital cameras manufacturers make a program to fictive convert the image from RAW to JPEG. The default saturation seems to be the lower value which camera give from RAW format without any color processing. When converting the RAW or original JPEG into common files, the saturation and contrast raised, so lot of experts use original images from camera and adjust all of settings on their choice. And don't forget: if you take a overexposed, oversaturated or very sharpened image, you cant set these parameters later to a level which could camera gave with the settings you wanted.
